I crave for some good Indian food sometimes. The problem is there are way too many options! Today, I went with a classic - poha. It is mainly made out of beaten white rice with turmeric and other spices, and seasoned with mustard seeds and peanuts.
What’s the secret?
- Soak some poha (you can get this at the Indian store) in water
- In the meantime, chop onions, tomatoes
- Heat some oil, and add some garlic, mustard seeds, curry leaves, peanuts, dried red chillies, chopped onions and salt until the onions are cooked.
- Add chopped tomatoes and turmeric and mix well
- Finally, add in the soaked poha and some lime juice
- Serve hot! :)
Another version could be to soak the poha in unsweetened vegan yogurt (like, tangy/sour yogurt) instead, and skipping the lime juice. I personally prefer this method. Also, if you feel like it, add some coconut flakes in! :)
